Ida’s Key Lime Cookies - Cayman Conundrum

Makes two dozen cookies

Ingredients:

1 ½ cups of flour

½ teaspoon baking powder

¼ teaspoon baking soda

¼ teaspoon sea salt

3 tablespoons freshly grated lime zest

1 cup sugar

1 teaspoon vanilla

1 stick softened butter

2 tablespoons plain Greek yogurt

4 teaspoons lime juice

Preheat oven to 350 degrees. In a bowl, whisk flour, baking soda, baking powder, and sea salt together. In a separate mixing bowl, add sugar and lime zest. Add softened butter to the sugar mixture and whisk until light and airy. Add yogurt, vanilla, and lime juice. Fold in the flour mixture. Place the cookie dough in the fridge for at least fifteen minutes. Form the dough into small balls. Place on a greased cookie sheet leaving at least two inches of space between each cookie. Bake for twelve minutes or until crispy at the edges and then let the cookies sit for five minutes before serving.
